PRODUCTION
The quality of Dogliani DOCG wine is guaranteed by the rigorous selection of the grapes used in its production. The vineyards are located on hilly terrain, exposed to the sun and cultivated according to traditional methods. The grapes used are mainly Dolcetto, a native vine of the area, which gives the wine its distinctive characteristics. All our vineyards are grown naturally and worked by hand, with the utmost respect for the Earth and with total care and attention for each vine.
COMBINATIONS
The ideal pairing for Dogliani DOCG wine is with meat dishes, such as braised meats, roasts and mature cheeses. Thanks to its structure and complexity, this wine also lends itself to being tasted alone, as a meditation wine.
CURIOSITY
The production of Dogliani DOCG wine takes place following rigorous winemaking criteria. After the harvest, the grapes are pressed and left to ferment at a controlled temperature for approximately 10-15 days. Subsequently, the wine is aged in oak barrels for at least 12 months, before being bottled and marketed.
